Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup BBQ sauce (homemade or your favorite store-bought variety)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional, for a bit of heat)
  • Salt and pepper to taste
  • 2 bell peppers, cut into 1-inch pieces (any color you prefer)
  • 1 large red onion, cut into wedges
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

Instructions

Follow these steps to bring a taste of my Asheville roots to your own backyard.

  1. In a large bowl, combine the BBQ sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Whisk until well blended.
  2. Add the cubed chicken to the marinade, tossing to coat evenly. Cover and refrigerate for at least 1 hour, or overnight if you have the time. This allows the flavors to penetrate the meat deeply.
  3. Preheat your grill to medium-high heat. If using an oven, preheat to 400°F.
  4. Thread the marinated chicken cubes, bell peppers, and onion wedges onto the skewers, alternating between each ingredient to create a colorful pattern.
  5. Place the skewers on the grill, cooking for 8-10 minutes per side, or until the chicken is cooked through and has a nice char. If using an oven, place the skewers on a baking sheet and cook for about 20 minutes, turning halfway through.
  6. Brush the skewers with additional BBQ sauce during the last few minutes of cooking for an extra layer of flavor.
  7. Remove from the grill or oven and let rest for a couple of minutes before serving.
