Ingredients
12 ounces jumbo pasta shells
1 tablespoon olive oil
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
2 cups ricotta cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 large egg, beaten
2 cups marinara sauce
Salt and pepper to taste
Fresh basil leaves, for garnish
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with olive oil.
Cook the pasta shells according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
Add the garlic and cook for another minute until fragrant. Stir in the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat.
Season the beef with oregano, red pepper flakes, salt, and pepper. Remove from heat and let it cool slightly.
In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, beaten egg, and the cooked beef mixture. Mix until well combined.
Spread 1 cup of marinara sauce on the bottom of the prepared baking dish.
Stuff each shell with the cheese and beef mixture, and place them in the baking dish seam side up.
Pour the remaining marinara sauce over the shells, then sprinkle with the remaining mozzarella cheese.
Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
