Ingredients
- 1 pound ground beef
- 8 ounces pasta of your choice (penne or rotini work well)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade blend)
- 1 can (15 ounces) diced tomatoes, undrained
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Feel free to swap out ground beef for ground turkey or chicken if that’s more to your taste. For a vegetarian version, black beans are a fantastic substitute for the meat.
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
- Add the garlic and cook for 1 more minute, stirring frequently to prevent burning.
- Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned, about 5-7 minutes.
- Stir in the taco seasoning, ensuring the beef is well coated. Add salt and pepper to taste.
- Pour in the undrained diced tomatoes and corn, stirring to combine. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
- Reduce the heat to low and stir in the cooked pasta, shredded cheddar cheese, and sour cream until the cheese is melted and everything is well combined.
