Ingredients

  • 1 pound ground beef
  • 8 ounces pasta of your choice (penne or rotini work well)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Feel free to swap out ground beef for ground turkey or chicken if that’s more to your taste. For a vegetarian version, black beans are a fantastic substitute for the meat.

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
  3. Add the garlic and cook for 1 more minute, stirring frequently to prevent burning.
  4. Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned, about 5-7 minutes.
  5. Stir in the taco seasoning, ensuring the beef is well coated. Add salt and pepper to taste.
  6. Pour in the undrained diced tomatoes and corn, stirring to combine. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  7. Reduce the heat to low and stir in the cooked pasta, shredded cheddar cheese, and sour cream until the cheese is melted and everything is well combined.
