1/2 cup unsalted butter, cold and cubed
1 cup buttermilk
1 pound ground sausage
1/4 cup all-purpose flour (for gravy)
2 cups whole milk
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional for a kick)
Instructions
Preheat your oven to 425°F and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Pour in the buttermilk and stir until just combined. Be careful not to overmix, as you want the dough to remain light and fluffy.
