Learn how to make delicious Blueberry Lemon Crumb Bars. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries (or frozen, if you prefer)
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch

Substitution Tips: If you’re out of fresh blueberries, frozen ones work just as well. Swap out the granulated sugar for coconut sugar if you’re seeking a more caramel-like sweetness. For a gluten-free version, use almond flour in place of all-purpose flour. Each substitution brings its own unique touch, just like the diverse meals enjoyed in my family home.

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, letting it hang over the sides for easy lifting later.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. This dry mixture forms the base of our bars, holding them together much like the strong family bonds in my household.
  3. Using a pastry cutter or your fingertips, blend in the cold, diced butter until the mixture resembles coarse crumbs. Stir in the egg yolk and vanilla extract until evenly mixed.
  4. Press two-thirds of this crumb mixture into the prepared baking dish, forming a firm base. Set the remaining crumb mixture aside for the topping.
  5. In another bowl, toss the blueberries with lemon zest, lemon juice, brown sugar, and cornstarch until well-coated. This tangy, sweet filling is the heart of the bars, just as our kitchen was the heart of family gatherings.
  6. Spread the blueberry mixture over the crust in the baking dish, then sprinkle the remaining crumb mixture evenly over the top.
  7. Bake for 35-40 minutes, or until the top is golden brown and the blueberries are bubbly. The aroma will fill your kitchen with a warm, inviting scent that’s hard to resist.
  8. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Cut into squares and serve with a smile.
