Ingredients
- 12 ounces of spaghetti
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning (or to taste)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
If you’re missing an ingredient or two, don’t worry! You can easily substitute the heavy cream with half-and-half for a lighter version, or swap out the peppers for whatever veggies you have on hand. Cooking is all about flexibility and creativity, just like my abuela taught me!
Instructions
- Start by cooking the spaghetti according to package instructions. Once done, drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and cook for about 3-4 minutes until they start to soften.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.
- Reduce the heat to low, then stir in the Parmesan cheese until melted and the sauce is creamy.
- Return the cooked chicken to the skillet, followed by the cooked spaghetti. Toss everything together until well coated with the sauce.
- Garnish with fresh parsley before serving.
