Ingredients
12 oz of your favorite pasta (penne or fettuccine work well)
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 cup chicken broth
5 oz Boursin cheese (Garlic & Fine Herbs)
1 cup heavy cream
1 teaspoon lemon zest
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Fresh parsley, chopped, for garnish
Instructions
Begin by cooking your pasta in a large pot of salted boiling water until al dente, according to the package instructions. Drain and set aside, reserving a cup of the pasta water.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan, and bring to a simmer.
Reduce the heat to low, and stir in the Boursin cheese and heavy cream until the cheese is melted and the sauce is smooth.
Add the lemon zest and cooked chicken back into the skillet, stirring to combine. Simmer for an additional 2-3 minutes.
Toss the cooked pasta into the sauce, thinning with reserved pasta water as needed to achieve your desired consistency.
Sprinkle in the Parmesan cheese, stirring until incorporated. Taste and adjust seasoning with more salt and pepper if needed.
Serve immediately, garnished with fresh parsley for a pop of color and a hint of freshness.
