Ingredients
- 2 large croissants
- 4 slices of bacon or turkey bacon
- 2 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup fresh spinach leaves
- 1 tablespoon butter
- Salt and pepper to taste
- Optional: Sliced avocado or tomato for added freshness
Feel free to swap out the bacon for ham or a plant-based alternative. The cheddar cheese can be replaced with Swiss or even a spicy pepper jack if you’re feeling adventurous!
Instructions
- Preheat your oven to 350°F. This will be used to warm the croissants.
- In a skillet over medium heat, cook the bacon until crispy. Once done, set it aside on a paper towel to drain excess grease.
- In the same skillet, melt the butter. Crack the eggs into the skillet and scramble, adding salt and pepper to taste. Cook until just set, about 3-4 minutes.
- Slice the croissants in half and place them in the oven for about 3 minutes to warm them up.
- Remove the croissants from the oven and layer the bottom half with scrambled eggs, bacon, cheese, and spinach.
- Top with the remaining half of the croissant and gently press down to help the cheese melt slightly.
- For an extra touch, add slices of avocado or tomato before serving.
