Ingredients

  • 2 large croissants
  • 4 slices of bacon or turkey bacon
  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup fresh spinach leaves
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional: Sliced avocado or tomato for added freshness

Feel free to swap out the bacon for ham or a plant-based alternative. The cheddar cheese can be replaced with Swiss or even a spicy pepper jack if you’re feeling adventurous!

Instructions

  1. Preheat your oven to 350°F. This will be used to warm the croissants.
  2. In a skillet over medium heat, cook the bacon until crispy. Once done, set it aside on a paper towel to drain excess grease.
  3. In the same skillet, melt the butter. Crack the eggs into the skillet and scramble, adding salt and pepper to taste. Cook until just set, about 3-4 minutes.
  4. Slice the croissants in half and place them in the oven for about 3 minutes to warm them up.
  5. Remove the croissants from the oven and layer the bottom half with scrambled eggs, bacon, cheese, and spinach.
  6. Top with the remaining half of the croissant and gently press down to help the cheese melt slightly.
  7. For an extra touch, add slices of avocado or tomato before serving.
