Learn how to make delicious Breakfast Pigs in a Blanket. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Gather the following ingredients to create this delicious breakfast treat. Feel free to make substitutions based on what you have on hand!

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon lemon juice)
  • 1 large egg
  • 2 tablespoons melted butter
  • 12 breakfast sausages
  • Maple syrup, for serving

Instructions

Follow these simple steps to bring this breakfast classic to your table:

  1. Preheat your oven to 200°F to keep the cooked sausages warm while you prepare the pancakes.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the buttermilk, egg, and melted butter, then pour into the dry ingredients. Stir until just combined; a few lumps are okay.
  4. Cook the breakfast sausages in a skillet over medium heat until they are browned and cooked through, about 8-10 minutes. Transfer to the oven to keep warm.
  5. Heat a non-stick griddle or skillet over medium heat. Lightly grease with butter or oil.
  6. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.
  7. Wrap each sausage with a cooked pancake, securing it with a toothpick if necessary. Serve warm with maple syrup.
