Ingredients
4 medium sweet potatoes
2 cups cooked shredded chicken (rotisserie chicken works great)
1/2 cup Buffalo sauce
1/4 cup ranch dressing or blue cheese dressing
1/2 cup shredded cheddar cheese
2 tablespoons unsalted butter
Salt and pepper to taste
2 green onions, sliced
1/4 cup crumbled blue cheese (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Wash and dry the sweet potatoes, then poke each one with a fork several times. This step reminds me of when my abuela used to let me “help” with similar tasks in the kitchen.
Place the sweet potatoes on the baking sheet and bake for 45-50 minutes, or until they are tender and can be easily pierced with a fork.
While the sweet potatoes are baking, prepare the filling. In a medium saucepan over medium heat, combine the shredded chicken, Buffalo sauce, and butter. Stir until the butter has melted and the chicken is heated through. Season with salt and pepper to taste.
Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Carefully cut a slit in the top of each potato, being cautious of the steam.
Using a fork, gently fluff the inside of each sweet potato and add a bit of the shredded cheddar cheese to the interior.
Spoon the Buffalo chicken mixture into each sweet potato, dividing evenly. Top each with an additional sprinkle of cheddar cheese, then return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and drizzle with ranch or blue cheese dressing. Garnish with sliced green onions and crumbled blue cheese, if desired.
