Ingredients

  • 1 green bell pepper, diced

  • 2 green onions, sliced for garnish

If you’re out of Cajun seasoning, you can make your own by mixing paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, and salt. And if you prefer a milder dish, adjust the amount of cayenne to your liking.

Instructions

  1. Start by cooking the rice. In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered.
  2. While the rice is cooking, toss the shrimp with Cajun seasoning in a bowl, ensuring each piece is coated with the spices.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil. Sauté the onions, bell peppers, and garlic until they are soft and fragrant, about 5 minutes.
  5. Sprinkle the smoked paprika over the vegetables, season with salt and pepper, and stir to combine.
  6. Gently fold the cooked rice into the vegetable mixture and stir until well combined.
  7. Add the cooked shrimp back into the skillet and toss everything together, allowing the flavors to meld for a couple of minutes.
  8. Serve the Cajun Shrimp Rice Bowl hot, garnished with sliced green onions and lemon wedges on the side for a fresh burst of citrus.
