Ingredients
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced
1 large onion, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 jalapeño, seeds removed and minced
1 tablespoon Cajun seasoning
1 teaspoon ground cumin
1 teaspoon smoked paprika
2 (15-ounce) cans of white beans, drained and rinsed
4 cups chicken broth
1 cup frozen corn
1/2 cup heavy cream
Salt and pepper to taste
Chopped fresh cilantro for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
In the same pot, add the onion, garlic, green and red bell peppers, and jalapeño. Sauté until the vegetables are soft, about 5 minutes.
Stir in the Cajun seasoning, cumin, and smoked paprika, allowing the spices to bloom for about 1 minute.
Return the chicken to the pot, along with the white beans and chicken broth. Bring the mixture to a simmer, then reduce the heat to low and cover. Cook for 20 minutes, allowing the flavors to meld.
Add the frozen corn and heavy cream, stirring to combine. Continue to simmer for another 5 minutes, or until the chili reaches your desired thickness.
Season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.
