  • 1/2 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup sliced almonds
  • Powdered sugar, for dusting (optional)

If fresh cherries are out of season, feel free to use frozen ones. Just make sure they’re thawed and drained. For a richer almond flavor, you can substitute half of the flour with almond flour.

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the melted butter and sugar until well combined. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla and almond extracts until the batter is smooth and fragrant.
