Ingredients

  • 4 large sweet potatoes, peeled and cut into 1-inch cubes

  • 1/2 cup brown sugar
  • 1/4 cup maple syrup (or honey for a different twist)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, roughly chopped (optional, for added crunch)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a bit of butter or non-stick spray.
  2. In a large saucepan over medium heat, melt the butter. Stir in the brown sugar, maple syrup, cinnamon, nutmeg, and salt. Cook for about 2-3 minutes until the sugar has dissolved and the mixture is smooth and bubbly.
  3. Remove the saucepan from the heat and stir in the vanilla extract.
  4. Place the sweet potato cubes in the prepared baking dish and pour the syrup mixture over them, tossing to coat evenly.
  5. Sprinkle the chopped pecans over the top if using.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the sweet potatoes are tender and caramelized.
  7. Let the dish cool slightly before serving, allowing the syrup to thicken a bit more.
