Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 cup uncooked jasmine rice
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

If you don’t have chicken thighs, chicken breasts work as a suitable substitute. For a gluten-free version, try using tamari instead of soy sauce. And if you want to up the veggie content, feel free to toss in some sliced bell peppers or broccoli florets.

Instructions

  1. In a large bowl, combine soy sauce, brown sugar, and olive oil. Add the chicken thighs, ensuring they are well coated. Let them marinate for at least 30 minutes, or longer if you have the time.
  2. While the chicken marinates, rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions and set aside.
  3. Heat a large skillet over medium-high heat. Remove the chicken from the marinade and sear on each side for about 3-4 minutes, until caramelized. Transfer the chicken to a plate and set aside.
  4. In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Sauté for about 1 minute, until fragrant.
  5. Pour in the chicken broth and rice vinegar, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  6. Return the chicken to the skillet, cover, and simmer for about 15 minutes, or until the chicken is cooked through and tender.
  7. Once done, serve the chicken over a bed of jasmine rice, garnished with green onions and sesame seeds. Season with salt and pepper to taste.
