Ingredients
- 1 pre-made pie crust or homemade, if you’re feeling adventurous
- 4 slices of bacon, chopped
- 2 large onions, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 3 large eggs
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese (or substitute with Swiss cheese)
- 1/4 cup chopped fresh chives
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional, but adds warmth)
Feel free to customize this quiche by swapping the bacon for turkey bacon or omitting it for a vegetarian version. You can also experiment with different cheeses or add sautéed mushrooms for extra depth.
Instructions
- Preheat your oven to 375°F (190°C). Roll out your pie crust and fit it into a 9-inch pie pan. Prick the bottom with a fork and par-bake for about 10 minutes until lightly golden. Set aside to cool.
- In a large skillet over medium heat, cook the chopped bacon until crisp. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon drippings in the pan.
- Add olive oil to the skillet with the bacon drippings. Stir in the sliced onions and sugar, and cook on medium-low heat until the onions are caramelized, about 20-25 minutes. Stir occasionally to prevent burning. My abuela always said patience is key when caramelizing onions, and she was right!
- In a separate bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- Spread the caramelized onions evenly over the cooled pie crust. Top with the cooked bacon and shredded cheese.
- Pour the egg mixture over the filling, ensuring it’s evenly distributed. Sprinkle chopped chives on top for a touch of color and flavor.
- Bake the quiche for 35-40 minutes, or until the filling is set and the top is slightly golden. A tip from my kitchen: if the crust edges start to brown too quickly, cover them with foil to prevent burning.
- Allow the quiche to cool slightly before slicing. This allows the flavors to meld beautifully, making each bite a little celebration of taste and texture.
