Feel free to customize this quiche by swapping the bacon for turkey bacon or omitting it for a vegetarian version. You can also experiment with different cheeses or add sautéed mushrooms for extra depth.

Instructions

  1. Preheat your oven to 375°F (190°C). Roll out your pie crust and fit it into a 9-inch pie pan. Prick the bottom with a fork and par-bake for about 10 minutes until lightly golden. Set aside to cool.
  2. In a large skillet over medium heat, cook the chopped bacon until crisp. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon drippings in the pan.
  3. Add olive oil to the skillet with the bacon drippings. Stir in the sliced onions and sugar, and cook on medium-low heat until the onions are caramelized, about 20-25 minutes. Stir occasionally to prevent burning. My abuela always said patience is key when caramelizing onions, and she was right!
  4. In a separate bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
  5. Spread the caramelized onions evenly over the cooled pie crust. Top with the cooked bacon and shredded cheese.
  6. Pour the egg mixture over the filling, ensuring it’s evenly distributed. Sprinkle chopped chives on top for a touch of color and flavor.
  7. Bake the quiche for 35-40 minutes, or until the filling is set and the top is slightly golden. A tip from my kitchen: if the crust edges start to brown too quickly, cover them with foil to prevent burning.
