Ingredients

  • 12 ounces spaghetti or your favorite pasta
  • 4 strips of bacon, chopped
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove with a slotted spoon and drain on paper towels, leaving the bacon fat in the skillet.
  3. Add the olive oil and butter to the skillet. Once melted, add the sliced onions. Cook, stirring occasionally, for about 20-25 minutes until the onions are caramelized and golden brown. This requires patience, but trust me, it’s worth it—just like my abuela always said, good things take time.
  4. Stir in the minced garlic and red pepper flakes (if using) and cook for another 2 minutes until fragrant.
  5. Add the cooked pasta to the skillet along with the crispy bacon. Toss everything together, adding reserved pasta water as needed to create a silky sauce.
  6. Remove from heat and stir in the Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  7. Serve immediately, garnishing with extra Parmesan and parsley if desired.
