Ingredients

  • 2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup vegetable oil (or melted coconut oil for a twist)
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup walnuts or pecans, chopped (optional)
  • For the frosting: 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, mix together the vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine the wet and dry ingredients, stirring until just mixed. Fold in the grated carrots, crushed pineapple, and optional nuts.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
  7. For the frosting, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla extract, and salt, beating until fluffy.
  8. Once the cakes are completely cooled, spread a generous layer of frosting on the top of the first cake. Place the second cake on top and frost the top and sides of the cake.
