Ingredients
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (carrots, peas, corn)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 3/4 cup buttermilk
- 1 tablespoon fresh parsley, chopped (optional)
If you’re missing any ingredient, no worries! You can substitute the mixed vegetables with any fresh veggies you have on hand, or swap buttermilk with a mix of regular milk and a splash of lemon juice for that tangy touch.
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
- In a large bowl, combine the shredded chicken, frozen vegetables, cream of chicken soup, sour cream, garlic powder, and onion powder. Mix until well blended and pour the mixture into the prepared baking dish.
- Sprinkle the shredded cheddar cheese evenly over the chicken mixture. This step always reminds me of the time I helped my abuela with the cheese topping for her casseroles — a special task that made me feel trusted and grown-up.
- In another bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. My abuela always said using your hands adds a touch of love to the dough!
- Pour in the buttermilk and stir until a dough forms. Drop spoonfuls of the dough over the chicken mixture, spreading it out as evenly as possible.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly. The aroma will fill your kitchen, taking you back to those cherished family dinners.
- Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired. Enjoy this dish with your loved ones, sharing stories and laughter as we did around my family’s table.
