Ingredients
4 large apples (Granny Smith or Honeycrisp work well)
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 cup graham cracker crumbs
2 tablespoons unsalted butter, melted
1/4 cup chopped pecans (optional)
A pinch of salt
Instructions
Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
Slice the top off each apple and scoop out the core using a melon baller or a small spoon, being careful not to puncture the bottom.
In a medium bowl, beat the cream cheese until smooth. Add the sugar, vanilla extract, ground cinnamon, and a pinch of salt. Mix until well combined and creamy.
Spoon the cream cheese mixture into each apple cavity, filling them generously.
In a small bowl, combine the graham cracker crumbs, melted butter, and chopped pecans (if using). Sprinkle this mixture over the top of the cream cheese filling in each apple.
Place the stuffed apples in the prepared baking dish and bake for 25-30 minutes, or until the apples are tender but still hold their shape.
Remove from the oven and let cool slightly before serving. The filling should be warm and slightly set.
