Learn how to make delicious Cheesy Beef Rice Bake. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound ground beef
1 cup uncooked white rice
2 cups beef broth
1 cup shredded cheddar cheese
1 can (10 oz) diced tomatoes with green chilies
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil
Optional: chopped cilantro for garnish
Instructions
Preheat your oven to 375°F. This will ensure your bake cooks evenly and develops a lovely golden crust.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant.
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until the beef is browned, about 5-7 minutes, and drain any excess fat.
Stir in the cumin, paprika, salt, and pepper, letting the spices coat the beef mixture evenly.
Add the uncooked rice, beef broth, and diced tomatoes with green chilies to the skillet. Stir everything together until well combined.
Transfer the mixture to a greased baking dish, spreading it out evenly.
Top with shredded cheddar cheese, covering the entire surface.
Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes to let the cheese brown slightly.
Once done, remove from the oven and let it sit for a few minutes before serving. Garnish with chopped cilantro if desired.
