Ingredients
20 jumbo pasta shells
2 cups cooked chicken, shredded (rotisserie chicken works great)
1 cup ricotta cheese
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese, divided
1 egg
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups Alfredo sauce (store-bought or homemade)
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil and cook the pasta shells al dente according to the package instructions. Drain and set aside.
In a large mixing bowl, combine shredded chicken, ricotta cheese, 1 cup of mozzarella, 1/4 cup of Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
Pour 1 cup of Alfredo sauce into the bottom of a 9×13 inch baking dish, spreading it evenly to coat.
Stuff each shell with the chicken and cheese mixture, placing them seam side up in the prepared baking dish.
Pour the remaining Alfredo sauce over the stuffed shells, ensuring each shell is generously covered.
Sprinkle the remaining mozzarella and Parmesan cheeses over the top.
Cover the dish with foil and bake for 25 minutes. Uncover and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
