  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, water, and salt until smooth. Stir in the melted butter. Let the batter rest for at least 30 minutes in the refrigerator.
  2. While the batter is resting, heat olive oil in a skillet over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Season with garlic powder, salt, and pepper.
  3. Add the sliced mushrooms to the chicken, cooking until they’re soft and any liquid has evaporated, about 4-5 minutes. Stir in the mozzarella and Parmesan cheese until melted and well combined. Set aside.
  4. Preheat a non-stick pan over medium heat. Lightly coat with butter or non-stick spray. Pour about 1/4 cup of the crepe batter into the pan, tilting it to spread the batter evenly.
  5. Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for 1-2 more minutes on the other side. Repeat with the remaining batter.
  6. To assemble, place a generous spoonful of the chicken and mushroom filling onto each crepe, fold into a cone shape, and garnish with chopped parsley.
