- 1 cup all-purpose flour

- 1/2 cup water

- 1 pound boneless, skinless chicken breast, diced

Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, water, and salt until smooth. Stir in the melted butter. Let the batter rest for at least 30 minutes in the refrigerator.
- While the batter is resting, heat olive oil in a skillet over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Season with garlic powder, salt, and pepper.
- Add the sliced mushrooms to the chicken, cooking until they’re soft and any liquid has evaporated, about 4-5 minutes. Stir in the mozzarella and Parmesan cheese until melted and well combined. Set aside.
- Preheat a non-stick pan over medium heat. Lightly coat with butter or non-stick spray. Pour about 1/4 cup of the crepe batter into the pan, tilting it to spread the batter evenly.
- Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for 1-2 more minutes on the other side. Repeat with the remaining batter.
- To assemble, place a generous spoonful of the chicken and mushroom filling onto each crepe, fold into a cone shape, and garnish with chopped parsley.
