  • 2 cups sliced mushrooms (button or cremini work well)
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

Ready to get cooking? Follow these simple steps:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add the mushrooms and cook until they are soft and golden, about 5 minutes. Stir in half the garlic, thyme, and rosemary. Season with salt and pepper.
  3. Remove the mushroom mixture from heat and let it cool slightly. Stir in the shredded mozzarella cheese.
  4. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  5. Stuff each chicken breast with the mushroom and cheese mixture. Secure with toothpicks if needed.
  6. In the same skillet, melt the remaining butter. Add the remaining garlic and cook until fragrant, about 1 minute. Place stuffed chicken breasts in the skillet and sear each side for 3 minutes until golden.
  7. Transfer the chicken to your prepared baking dish. Pour the garlic butter from the skillet over the chicken.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Garnish with fresh parsley and serve hot.
