- 4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms (button or cremini work well)
- 1 cup shredded mozzarella cheese
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste

If you’re out of mozzarella, feel free to substitute with Monterey Jack or even a mix of cheeses for a more complex flavor. And don’t worry if you can’t find fresh herbs — dried ones work just as beautifully, and they’re a staple in my pantry.

Ready to get cooking? Follow these simple steps:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- In a skillet over medium heat, melt 1 tablespoon of butter. Add the mushrooms and cook until they are soft and golden, about 5 minutes. Stir in half the garlic, thyme, and rosemary. Season with salt and pepper.
- Remove the mushroom mixture from heat and let it cool slightly. Stir in the shredded mozzarella cheese.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the mushroom and cheese mixture. Secure with toothpicks if needed.
- In the same skillet, melt the remaining butter. Add the remaining garlic and cook until fragrant, about 1 minute. Place stuffed chicken breasts in the skillet and sear each side for 3 minutes until golden.
- Transfer the chicken to your prepared baking dish. Pour the garlic butter from the skillet over the chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley and serve hot.
