Ingredients
- 2 pounds of baby potatoes, quartered
- 1 pound of smoked sausage, sliced
- 1 packet of ranch seasoning mix
- 2 cups of shredded cheddar cheese
- 1 cup of sour cream
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of chopped fresh parsley (optional, for garnish)
Feel free to substitute the smoked sausage with chicken or turkey sausage if you prefer a lighter option. For a bit of heat, add a pinch of red pepper flakes.
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and pepper until well-coated.
- Spread the potatoes in an even layer on the prepared baking sheet and roast for 20 minutes.
- After 20 minutes, remove the baking sheet from the oven and add the sliced smoked sausage to the potatoes. Stir gently to combine.
- Return the baking sheet to the oven and continue roasting for an additional 15 minutes, or until the potatoes are tender and the sausage is browned.
- In a small bowl, mix together the sour cream and half of the shredded cheddar cheese.
- Remove the baking sheet from the oven and spoon the sour cream and cheese mixture over the potatoes and sausage. Stir gently to combine.
- Sprinkle the remaining cheddar cheese on top and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley if desired and serve hot.
