Ingredients

  • 2 pounds of baby potatoes, quartered
  • 1 pound of smoked sausage, sliced
  • 1 packet of ranch seasoning mix
  • 2 cups of shredded cheddar cheese
  • 1 cup of sour cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 tablespoon of chopped fresh parsley (optional, for garnish)

Feel free to substitute the smoked sausage with chicken or turkey sausage if you prefer a lighter option. For a bit of heat, add a pinch of red pepper flakes.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and pepper until well-coated.
  3. Spread the potatoes in an even layer on the prepared baking sheet and roast for 20 minutes.
  4. After 20 minutes, remove the baking sheet from the oven and add the sliced smoked sausage to the potatoes. Stir gently to combine.
  5. Return the baking sheet to the oven and continue roasting for an additional 15 minutes, or until the potatoes are tender and the sausage is browned.
  6. In a small bowl, mix together the sour cream and half of the shredded cheddar cheese.
  7. Remove the baking sheet from the oven and spoon the sour cream and cheese mixture over the potatoes and sausage. Stir gently to combine.
  8. Sprinkle the remaining cheddar cheese on top and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped fresh parsley if desired and serve hot.
