4 medium-sized russet potatoes
2 tablespoons olive oil
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh chives (or substitute with green onions)
1 teaspoon garlic powder
Salt and pepper to taste
1/2 cup sour cream (optional, for serving)
Instructions
Preheat your oven to 400°F. Line a muffin tin with paper liners or lightly grease with cooking spray.
Wash and peel the potatoes, then cut them into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add olive oil, garlic powder, salt, and pepper. Use a potato masher to smash everything until combined but still slightly chunky.
Fold in the cheddar cheese, Parmesan cheese, and chives. Mix until the cheese is well incorporated throughout the potatoes.
Spoon the potato mixture evenly into the prepared muffin tin, pressing down gently to pack them in.
