Ingredients
1 pound boneless, skinless chicken breasts
1/2 cup Buffalo sauce (adjust to taste)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
2 cups cooked brown rice
1 cup shredded lettuce
1/2 cup cherry tomatoes, halved
1/4 cup blue cheese crumbles (or feta for a milder flavor)
1/4 cup ranch dressing
1 avocado, sliced
2 green onions, chopped
Optional: 1/4 cup chopped cilantro for garnish
Instructions
Start by preheating your oven to 375°F. Line a baking sheet with parchment paper for easy cleanup.
In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Place the chicken breasts on the prepared baking sheet and brush them with the olive oil mixture. Make sure they are well-coated for maximum flavor.
Bake the chicken in the oven for 25-30 minutes, or until fully cooked through and juices run clear. I like to use a meat thermometer to ensure the internal temperature reaches 165°F.
While the chicken is baking, cook the brown rice according to the package instructions if you haven’t done so already.
