Gather these ingredients to create a meal that will transport you straight to the bustling markets of Marrakesh:
- 1 pound ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
- Salt and pepper, to taste
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1 tablespoon olive oil
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 2 cloves garlic, finely minced (for the sauce)
Feel free to substitute ground turkey if you have it on hand, and if you’re looking for a gluten-free option, switch the breadcrumbs for almond meal.
Instructions
- In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, smoked paprika, cayenne pepper, salt, pepper, parsley, breadcrumbs, and beaten egg. Mix thoroughly until all ingredients are well incorporated.
- Using your hands, shape the mixture into small, oval-shaped patties, approximately the size of your palm.
- Heat olive oil in a large skillet over medium heat. Once hot, add the kofta patties in batches, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until nicely browned and cooked through. Remove from the skillet and set aside.
- In a small bowl, prepare the creamy garlic yogurt sauce by whisking together Greek yogurt, lemon juice, and minced garlic. Season with a pinch of salt and pepper.
- Serve the kofta warm, drizzled with the creamy garlic yogurt sauce. Enjoy the vibrant flavors and the comforting aroma that fills your kitchen.
