Ingredients

  • 2 packs of ramen noodles (discard seasoning packets)
  • 1 pound boneless, skinless chicken breast, sliced thinly
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)

Feel free to substitute vegetables based on what you have on hand—snow peas or carrots would work wonderfully too. If you’re vegetarian, swap the chicken with tofu or your protein of choice.

Instructions

  1. Start by cooking the ramen noodles according to package instructions, but stop just short of al dente, as they’ll cook further in the stir-fry. Drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of oil to the skillet. Toss in the garlic and ginger, sautéing until fragrant, about 30 seconds.
  4. Add the bell pepper and broccoli, stirring frequently until they begin to soften, approximately 3-4 minutes.
  5. Return the chicken to the skillet, then add the cooked ramen noodles. Pour in the soy sauce, oyster sauce, honey, and sesame oil. Toss everything together until well combined and heated through, about 2 minutes.
  6. Finish by adding the sliced green onions and giving it one final toss. Garnish with sesame seeds if desired.
