Ingredients

  • 1.5 pounds of boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 large pita bread or flatbreads
  • 1 cup plain Greek yogurt
  • 2 tablespoons tahini
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped fresh parsley
  • 1/2 cup sliced cucumbers
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced red onion

If you’re out of coriander, don’t worry! A pinch of ground ginger can add a lovely depth to the marinade. And if you prefer a milder garlic sauce, simply reduce the garlic powder.

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper. Add the chicken thighs and ensure they are well-coated with the marinade. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
  2. Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until the chicken is cooked through and slightly charred. My mom always said the best shawarma has a little char for that smoky flavor.
  3. While the chicken is grilling, prepare the garlic sauce. In a small bowl, combine the Greek yogurt, tahini, apple cider vinegar, garlic powder, and a pinch of salt. Stir until smooth and set aside.
  4. Once the chicken is cooked, allow it to rest for a few minutes. Slice into thin strips.
  5. To assemble the wraps, lay out the pita bread and spread a generous amount of the garlic sauce over each. Place the sliced chicken, cucumbers, tomatoes, red onion, and fresh parsley on top. Roll the pita tightly to enclose the filling.
  6. Serve immediately, and enjoy the burst of flavors that will remind you of faraway markets and home-cooked meals.
