Learn how to make delicious Chili Chicken Bowl with Coconut Lime Drizzle. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Gather these ingredients, and let’s get started on creating a bowl that’s as comforting as it is flavorful:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup jasmine rice, cooked
  • 1 red bell pepper, thinly sliced
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1/2 cup coconut milk
  • 1 tablespoon honey
  • Optional: substitute brown rice or quinoa for jasmine rice

Instructions

Follow these steps to bring this flavorful dish to life:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and sprinkle with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Sauté until the chicken is cooked through and golden brown, about 8-10 minutes.
  2. While the chicken is cooking, prepare the coconut lime drizzle. In a small bowl, whisk together the coconut milk, lime juice, and honey until well combined. Set aside.
  3. Once the chicken is done, remove it from the pan and set aside. In the same pan, add the red bell pepper slices and black beans. Cook for about 5 minutes, until the peppers are tender-crisp.
  4. To assemble the bowls, start with a base of cooked jasmine rice. Top with the chicken, sautéed peppers and beans, avocado slices, and a sprinkle of fresh cilantro.
  5. Drizzle the coconut lime sauce over the top of each bowl just before serving. Enjoy the medley of flavors and textures!
