Follow these steps to bring this flavorful dish to life:
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and sprinkle with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Sauté until the chicken is cooked through and golden brown, about 8-10 minutes.
- While the chicken is cooking, prepare the coconut lime drizzle. In a small bowl, whisk together the coconut milk, lime juice, and honey until well combined. Set aside.
- Once the chicken is done, remove it from the pan and set aside. In the same pan, add the red bell pepper slices and black beans. Cook for about 5 minutes, until the peppers are tender-crisp.
