Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup caramel sauce
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8 inch baking dish with parchment paper, allowing the edges to hang over for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, cocoa powder, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and moist.
  3. Press the crumb mixture firmly into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes, then remove from the oven and set aside to cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the confectioners’ sugar, vanilla extract, and salt, beating until fully combined.
  5. Add the eggs one at a time, beating on low speed just until combined after each addition. Stir in the chocolate chips.
  6. Pour the cheesecake mixture over the cooled crust, spreading evenly with a spatula.
  7. Drizzle the caramel sauce over the top of the cheesecake layer. Use a knife or toothpick to swirl the caramel into the cheesecake mixture, creating a marbled effect.
  8. Bake for 30-35 minutes, or until the edges are set and the center jiggles slightly when gently shaken. Allow to cool completely at room temperature, then refrigerate for at least 4 hours, or overnight.
  9. Once chilled, lift the bars out of the baking dish using the parchment paper overhang. Cut into squares and serve.
