Instructions
Preheat your oven to 350°F. Line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal.
In a bowl, mix the graham cracker crumbs and 1/4 cup sugar. Stir in the melted butter until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let it cool.
In a large mixing bowl, beat the softened cream cheese and 1/2 cup sugar until smooth and creamy. Add the eggs one at a time, mixing well. Stir in the vanilla extract.
Pour the cheesecake mixture over the cooled crust, spreading it evenly.
In another bowl, whisk together the flour, baking soda, and salt.
In a separate bowl, beat the softened butter, brown sugar, and 1/4 cup granulated sugar until fluffy. Add the vanilla extract and mix well.
Gradually add the flour mixture to the butter mixture, mixing just until combined. Stir in the chocolate chips.
Drop spoonfuls of the cookie dough over the cheesecake layer, gently pressing down to cover most of the surface.
Bake for 30-35 minutes, or until the cookie dough is golden brown and the cheesecake layer has set.
Allow the bars to cool in the pan before refrigerating for at least 2 hours. Use the parchment overhang to lift the bars from the pan and slice into squares.
