Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup water
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon cinnamon
- 1/2 cup semi-sweet chocolate chips
- Vegetable oil, for frying
If you’re looking to make this recipe a bit lighter, you can substitute the cream cheese with a lower-fat version, or even try using Greek yogurt for a tangy twist.
Instructions
- In a medium saucepan, combine water, butter, and vanilla extract. Bring to a boil over medium heat.
- Remove from heat and immediately stir in flour, cocoa powder, sugar, baking powder, and salt until well combined.
- Let the mixture cool slightly, then beat in eggs one at a time until the dough is smooth and shiny.
- In a separate bowl, beat cream cheese, powdered sugar, and cinnamon until smooth. Fold in the chocolate chips.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Using a small scoop, form dough into balls. Flatten slightly and place a small spoonful of the cream cheese mixture in the center. Wrap dough around filling to enclose it completely.
- Fry in hot oil until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
As the churro bites sizzle in the oil, I’m reminded of the times my abuela would make traditional churros. The crackling sound of frying churros was always a signal that something delicious was about to happen.
