Ingredients

  • 8 ounces cream cheese, softened

  • 1 large egg
  • 1/2 cup semisweet chocolate chips, melted
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix the crushed chocolate cookies with the melted butter until well combined. Press about a tablespoon of the mixture firmly into the bottom of each muffin liner to form the crust.

  7. Once the cheesecakes are cool, spoon the chocolate ganache over each one, spreading it to cover the top evenly. Chill the cups in the refrigerator for at least 2 hours, allowing the flavors to meld beautifully.
