4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon aji amarillo paste (can substitute with 1 tablespoon of yellow bell pepper blended with 1/4 teaspoon cayenne pepper)
1 cup heavy cream
1/2 cup chicken broth
1 tablespoon lime juice
1 teaspoon ground cumin
Salt and pepper to taste
Fresh cilantro for garnish
Cooked white rice for serving
Instructions
Start by seasoning the chicken breasts with salt, pepper, and ground cumin. Let them sit for a few minutes while you prepare the other ingredients.
Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the garlic and cook for another 2 minutes, stirring frequently.
Stir in the aji amarillo paste, allowing the flavors to meld for about 1-2 minutes. If using the substitute, blend the yellow bell pepper with cayenne and add at this point.
Pour in the chicken broth and bring to a simmer. Add the chicken breasts to the skillet, cover, and cook for about 15 minutes, or until the chicken is cooked through.
Remove the chicken from the skillet and set aside. Stir in the heavy cream and lime juice, letting the sauce thicken slightly over low heat for about 5 minutes.
Return the chicken to the skillet, coating it well with the sauce. Simmer for another 5 minutes to let the flavors infuse.
