Ingredients

  • 1 cup cornmeal

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup canned corn, drained
  • 1/4 cup jalapeños, finely chopped (adjust to taste)
  • Optional: 1/4 cup crispy bacon bits

Feel free to experiment with the ingredients. If you prefer a milder version, you can replace jalapeños with sweet bell peppers. And for those days when you want an extra cheesy bite, a little more cheddar wouldn’t hurt!

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the buttermilk, eggs, and vegetable oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined. Avoid overmixing to keep the poppers light and fluffy.
  5. Fold in the cheddar cheese, corn, jalapeños, and bacon bits if using. The mixture should be thick enough to hold its shape but not too dry.
  6. Using a small ice cream scoop or a spoon, drop tablespoon-sized portions of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the poppers are golden brown and a toothpick inserted into the center comes out clean.
  8. Let them cool slightly on a wire rack before serving. Enjoy the warm, cheesy goodness!
