Ingredients
- 1.5 pounds of chicken breast, cut into 1-inch cubes
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional for extra heat)
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, finely chopped
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Feel free to substitute chicken breast with chicken thighs if you prefer darker meat. And if you’re out of Dijon, a hint of regular mustard will still deliver a delightful tang.
Instructions
- Preheat your grill to medium-high heat. If you’re using an oven, preheat to 400°F.
- In a small saucepan over low heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the Dijon mustard, paprika, cayenne pepper (if using), lemon juice, and half of the chopped parsley. Season with salt and pepper.
- Thread the chicken cubes onto the soaked skewers, leaving a little space between each piece for even cooking.
- Brush the skewer with the prepared cowboy butter, making sure each piece is well coated.
- Place the skewers on the grill or in the oven. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Once cooked, remove the skewers from the heat and brush with any remaining cowboy butter. Sprinkle with the rest of the parsley before serving.
