Learn how to make delicious Cowboy Butter Steak Bites. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Here’s what you’ll need to bring this dish to life:

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon fresh chives, chopped

Feel free to substitute the sirloin with ribeye or strip steak if you prefer a different cut. For a dairy-free version, you can swap the butter with a plant-based alternative.

Instructions

  1. Start by patting the steak cubes dry with paper towels and season them generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the steak cubes in a single layer, being careful not to overcrowd the pan. Cook for about 3 minutes on each side until they develop a nice crust and are cooked to your desired doneness. Remove the steak from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and become slightly browned, which adds a nutty flavor to the sauce.
  4. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.
  5. Stir in the Dijon mustard, lemon juice, paprika, and red pepper flakes if using. Let the sauce simmer for about 2 minutes to meld the flavors together.
  6. Return the steak bites to the skillet, tossing them in the buttery sauce. Cook for an additional 1-2 minutes.
  7. Finish by sprinkling the chopped parsley and chives over the steak bites. Serve immediately while they’re hot and flavorful.
