1 sheet puff pastry, thawed
8 oz brie cheese, sliced
1 cup fresh cranberries
1/4 cup sugar
2 tablespoons honey
3 oz pancetta, diced
1 tablespoon fresh thyme leaves
1 egg, beaten (for egg wash)
Pinch of salt
Flour, for dusting
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry to smooth any creases, then transfer it to the prepared baking sheet.
In a small saucepan, combine cranberries, sugar, and honey. Cook over medium heat until the cranberries have burst and the mixture has thickened, about 5-7 minutes. Set aside to cool slightly.
Scatter the brie slices evenly over the puff pastry, leaving a 1-inch border around the edges.
Spoon the cranberry mixture over the brie, spreading it out evenly.
