Ingredients
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup mandarin oranges, peeled and segmented
- 1/2 cup Greek yogurt (plain or vanilla)
- 2 tablespoons honey
- 1 tablespoon fresh mint, chopped
- Zest of 1 lime
- Juice of 1 lime
- Optional: 1/4 cup toasted almonds for crunch
If you’re in a pinch, feel free to substitute the fruits with whatever is in season or available, and swap Greek yogurt for coconut yogurt to make it dairy-free.
Instructions
- In a large bowl, combine the strawberries, blueberries, raspberries, and mandarin oranges. Toss them gently to mix.
- In a separate small bowl, whisk together the Greek yogurt, honey, lime zest, and lime juice until smooth and creamy.
- Pour the yogurt dressing over the fruit and gently fold until all the fruit is evenly coated. Be careful not to mash the berries.
- Sprinkle the chopped mint over the top for a fresh, aromatic touch.
- If desired, add toasted almonds for a crunchy texture.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
As a tip from my childhood memories, always taste the salad before serving to ensure the balance of sweetness and tartness is just right. Adjust with a touch more honey or lime if needed.
