Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until golden brown on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the diced bell peppers, onion, and garlic. Sauté until the vegetables are soft and fragrant, about 3-4 minutes.
  3. Add the rice to the skillet, stirring to coat with the vegetable mixture. Toast the rice for 1-2 minutes, which enhances its flavor.
  4. Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.
  5. Return the chicken to the skillet, nestling it into the rice mixture. Cover the skillet and reduce the heat to low. Cook for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Season with salt and pepper to taste. If desired, garnish with chopped parsley before serving.
