1 lb chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 cup long-grain rice
2 cups chicken broth
1 cup heavy cream
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, finely chopped
3 cloves garlic, minced
Salt and pepper to taste
Chopped parsley for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until golden brown on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add the diced bell peppers, onion, and garlic. Sauté until the vegetables are soft and fragrant, about 3-4 minutes.
Add the rice to the skillet, stirring to coat with the vegetable mixture. Toast the rice for 1-2 minutes, which enhances its flavor.
Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.
Return the chicken to the skillet, nestling it into the rice mixture. Cover the skillet and reduce the heat to low. Cook for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
Season with salt and pepper to taste. If desired, garnish with chopped parsley before serving.
