Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, red bell pepper, and celery, cooking until the vegetables are soft and fragrant, about 5 minutes.
  2. Add the minced garlic, smoked paprika, cayenne pepper, dried thyme, salt, and black pepper. Stir for another minute until the spices release their aroma.
  3. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Add the diced potatoes and let them cook until fork-tender, about 15 minutes.
