Ingredients
8 ounces of fettuccine or your favorite pasta
1 pound of shrimp, peeled and deveined
2 tablespoons of Cajun seasoning (adjust to taste)
2 tablespoons of olive oil
1 tablespoon of unsalted butter
3 cloves of garlic, minced
1 cup of heavy cream
1/2 cup of grated Parmesan cheese
Salt and pepper to taste
2 green onions, sliced for garnish
Lemon wedges for serving
Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated.
Heat olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
Pour in the heavy cream, stirring to combine with the garlic. Bring to a simmer and let it thicken slightly, about 2-3 minutes.
Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Add the cooked pasta and shrimp back into the skillet, tossing to coat in the creamy sauce. Cook for another minute to heat through.
Remove from heat and garnish with green onions. Serve with lemon wedges on the side for a bright, tangy contrast.
