Ingredients

  • 1 pound of beef sirloin, thinly sliced

  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1 cup shredded provolone cheese
  • 1 package (20 oz) cheese tortellini
  • 2 tablespoons chopped fresh parsley for garnish (optional)

Instructions

  1. Begin by cooking the tortellini according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same skillet, add the onion and bell pepper. Sauté until they are tender, about 5 minutes. Stir in the minced garlic and cook for another minute.
  4. Return the beef to the skillet and season with salt and black pepper. Mix well.
  5. Reduce the heat to low and pour in the heavy cream and beef broth. Stir to combine and let it simmer for about 3 minutes until slightly thickened.
  6. Add the shredded provolone cheese to the skillet, stirring until the cheese is melted and the sauce is creamy.
  7. Gently fold in the cooked tortellini, ensuring that each piece is well-coated with the sauce.
  8. Remove from heat, garnish with fresh parsley if desired, and serve immediately.
