Ingredients
Here’s everything you’ll need to create this comforting dish:
- 12 oz fettuccine or your pasta of choice
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup spinach leaves, optional
- Chopped fresh parsley for garnish
If you don’t have fettuccine, feel free to use any pasta you have on hand. For a lighter option, swap heavy cream with half-and-half, but remember, the richness is what makes this dish so special.
Instructions
- Bring a large pot of salted water to a boil, and cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken pieces with salt and pepper, then add them to the skillet.
- Cook the chicken for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Reduce heat to low and add Parmesan cheese and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
- Return the chicken to the skillet, and add in the cooked pasta. Toss everything together until the pasta is well coated with the sauce.
- If using, stir in spinach leaves until wilted.
- Garnish with fresh parsley before serving.
