  • 12 oz fettuccine or your pasta of choice
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 cup spinach leaves, optional
  • Chopped fresh parsley for garnish

If you don’t have fettuccine, feel free to use any pasta you have on hand. For a lighter option, swap heavy cream with half-and-half, but remember, the richness is what makes this dish so special.

Instructions

  1. Bring a large pot of salted water to a boil, and cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken pieces with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  6. Reduce heat to low and add Parmesan cheese and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
  7. Return the chicken to the skillet, and add in the cooked pasta. Toss everything together until the pasta is well coated with the sauce.
  8. If using, stir in spinach leaves until wilted.
  9. Garnish with fresh parsley before serving.
