- 4 medium-sized potatoes, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 salmon fillets, skin removed
- 1 cup heavy cream
- 3 tablespoons fresh dill, chopped
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 cup shredded Parmesan cheese
- Optional: 1 teaspoon red pepper flakes for a spicy kick
Feel free to substitute the heavy cream with a light cream or even a plant-based alternative if you prefer. The Parmesan cheese can also be swapped with your favorite cheese variety to suit your taste.
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with a bit of olive oil.
- In a large bowl, toss the sliced potatoes with olive oil, salt, and pepper. Arrange them in a single layer in the baking dish.
- Place the salmon fillets on top of the potatoes and season with salt, pepper, and a sprinkle of lemon juice.
- In a separate bowl, mix together the heavy cream, chopped dill, minced garlic, and remaining lemon juice. Pour this mixture evenly over the salmon and potatoes.
- Sprinkle the shredded Parmesan cheese over the top, and add red pepper flakes if you like a bit of heat.
- Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
- Let it cool for a few minutes before serving. Enjoy the creamy, aromatic flavors that bring warmth to your kitchen.
