Ingredients
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup Parmesan cheese, grated
Salt and pepper to taste
2 pounds Yukon Gold potatoes, peeled and quartered
1/2 cup milk
4 tablespoons unsalted butter
Fresh parsley, chopped (for garnish)
Instructions
Begin by boiling the potatoes in a large pot of salted water until tender, about 15-20 minutes.
While the potatoes are cooking, heat olive oil in a large skillet over medium heat.
Add the shrimp to the skillet and season with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
Pour in the heavy cream, stirring to combine with the garlic. Let it simmer for about 2 minutes.
Add Parmesan cheese, stirring continuously until the sauce thickens, about 3-4 minutes.
Return the shrimp to the skillet and coat with the creamy garlic sauce. Remove from heat.
Once the potatoes are done, drain and return them to the pot. Add milk and butter, mashing until smooth and creamy. Season with salt and pepper to taste.
Serve the shrimp over the mashed potatoes, garnished with fresh parsley.
