4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
2 teaspoons dried Italian herbs
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
Salt and pepper to taste
4 large russet potatoes, peeled and cubed
1/2 cup milk
3 tablespoons butter
Salt to taste (for potatoes)
6 large carrots, peeled and sliced
2 tablespoons honey
1 tablespoon butter (for carrots)
1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
Start by preparing the mashed potatoes. Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
Add 3 tablespoons of butter and milk to the potatoes. Mash until smooth and creamy. Season with salt to taste. Keep warm.
For the chicken, heat olive oil and butter in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian herbs.
Sear the chicken breasts in the skillet until golden brown on each side, about 4-5 minutes per side. Remove chicken and set aside.
In the same skillet, add garlic and sauté for 1 minute. Stir in the chicken broth and heavy cream, scraping up any brown bits from the bottom.
Return the chicken to the skillet and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
While the chicken simmers, prepare the honey glazed carrots. In a separate pan, melt 1 tablespoon of butter over medium heat.
Add the sliced carrots and sauté for about 5 minutes. Drizzle honey over the carrots, stirring to coat evenly, and cook for another 5 minutes until tender and glazed.
Serve the creamy herb chicken with a generous helping of mashed potatoes and honey glazed carrots. Garnish with fresh parsley if desired.
