1 tablespoon olive oil
1 pound ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional for some heat)
1 can (28 ounces) crushed tomatoes
4 cups chicken or vegetable broth
8 lasagna noodles, broken into pieces
1/2 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese

Fresh basil, chopped, for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the ground beef or Italian sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 3 minutes. Stir in the dried oregano, basil, and red pepper flakes if using.
Pour in the crushed tomatoes and broth, stirring to combine. Bring the mixture to a simmer.
Once simmering, add the broken lasagna noodles. Cook until the noodles are tender, about 10-12 minutes.
Reduce the heat to low and stir in the heavy cream, allowing it to heat through. Season the soup with salt and pepper to taste.
In a small bowl, combine the ricotta and mozzarella cheeses. Add dollops of the cheese mixture into the soup, stirring gently to incorporate.
